Gnocchi is a pasta made from mashed potatoes, refined flour, and rolled and boiled and served with various sauces such as pesto gnocchi is very famous dish.

Ingredients

  • 250 g Boiled and mashed poatatoes
  • 120 g Refined flour
  • 1 no Egg yolk
  • 5 g Salt
  • Water To boil pasta

Instructions

  • Boil the mashed potatoes and pass them through strainer so no lumps are there.
    250 g Boiled and mashed poatatoes
  • Add the refined flour, egg yolk and salt and mix thorough. Let it rest for 5 – 10 minutes.
    120 g Refined flour, 1 no Egg yolk, 5 g Salt
  • Roll them into small balls and using the backside of the pork roll it and keep aside.
  • Similar to this. You can also avoid this and boil directly.
  • In a stock pot or pan add water for boiling , add salt and little oil.

  • Let it boil , add the rolled gnocchi and cook for 5 minutes. Or you can identify once the gnocchi starts floating that means it is cooked through.
  • You can served or toss with various sauces.

Notes

The ratio of potatoes to flour is 2:1 ratio. And egg yolk gives the binding texture and softness to the pasta.
You can toss it with plenty of sauces such as pesto, tomato etc.
You can check if the pasta is cooked when they float on top of the boiling water ( around 4- 5 minutes).
