Easy and quick shahi paneer recipe

Shahi Paneer is a rich, creamy, and mildly sweet Mughlai dish made with paneer, cashew-based gravy, and aromatic spices. Fit for royalty, it has a silky-smooth texture with a delicate balance of spices, nuts, and cream. Traditionally served with naan, roti, or jeera rice, this dish is perfect for special occasions or indulgent meals. For the Gravy Base:

  • 2 tbsp oil or ghee
  • 1 tbsp butter
  • 1 bay leaf
  • 1- inch cinnamon stick
  • 2 cloves
  • 2 green cardamoms
  • 1 onion chopped
  • 2 tomatoes chopped
  • 10-12 cashews
  • 2 green chilies adjust to taste
  • 1 tsp ginger-garlic paste
  • ½ cup milk or water chef's tip

For the Final Dish:

  • 200 g paneer cubed
  • ¼ cup fresh cream
  • ½ tsp turmeric
  • 1 tsp Kashmiri red chili powder
  • ½ tsp garam masala
  • 1 tsp coriander powder
  • ½ tsp sugar optional
  • Salt to taste
  • ¼ cup water
  • 1 tbsp dried fenugreek leaves kasuri methi
  • Chopped coriander

Instructions

Prepare the Base

  • Heat oil/butter in a pan. Add bay leaf, cinnamon, cloves, and cardamoms, and sauté for a few seconds.
  • Add onions and cashews, and cook until the onions turn golden.
  • Stir in ginger-garlic paste and green chilies, and sauté until the raw smell disappears.
  • Add tomatoes, cook until soft, and then add milk. Let it simmer for 5 minutes.
  • Cool and blend this mixture into a smooth paste.

Make the Gravy

  • Heat butter in a pan and pour in the blended gravy.
  • Add turmeric, chili powder, coriander powder, garam masala, salt, and sugar. Stir well.
  • Pour in water and let it simmer for 5-7 minutes until the flavors meld beautifully.

Add the Royal Touch 👑

  • Add paneer cubes and mix gently.
  • Pour in fresh cream and kasuri methi, and stir to get that rich, creamy texture.
  • Simmer for another 2 minutes and garnish with saffron strands and chopped coriander.

Notes

  • Paneer Tip: For soft paneer, soak store-bought paneer in warm water for 10 minutes before using.
  • Gravy Consistency: Adjust thickness by adding more/less water or milk.
  • Flavor Boost: A pinch of saffron or a drizzle of honey enhances the richness!
  • Make-Ahead: The gravy can be prepared a day in advance and stored in the fridge.
