How to make Chili con carne without beans?

Chili con carne recipe from Mexico or Texas is made from stewed beef in hot chiles and often red beans are added, brown sauce and served with breads.

Ingredients

  • 250 g Ground meat Beef
  • 2 tbsp Oil
  • 5 g Garlic chopped
  • 50 g Onion sliced
  • 25 g Red capsicum
  • 25 g Yellow capsicum
  • 20 g Dried Red chilies sliced Your favorite choice, I used ancho, guajilo, chiptole
  • 5 g Smoked paprika powder
  • 10 g Fresh Jalapenos toppings
  • 5 g Thyme
  • 3 g Oregano
  • 150 ml Brown sauce
  • 50 ml Water or beef stock
  • 10 g Salt As required

Instructions

  • Cut the capsicums into chopped. Onions into thin sliced, garlic fine chopped. red chilies and jalapeno also thin sliced with seeds and no stem.
    Prepare brown sauce and keep ready.
  • In a pan, add oil or butter, garlic chopped, onion sliced and sauté till transparent.
    2 tbsp Oil, 5 g Garlic chopped, 50 g Onion sliced
  • Add the minced ground beef , salt and cook for 5 minutes.
    250 g Ground meat
  • Add the capsicums, red chilies, jalapenos, and cook for 5 minutes in slow flame.
    25 g Red capsicum, 25 g Yellow capsicum, 20 g Dried Red chilies sliced
  • Add smoked paprika powder, thyme and oregano and sauté for 2 minute.
    5 g Thyme, 3 g Oregano, 5 g Smoked paprika powder
  • Then add brown sauce, water or beef stock and let it simmer for 20-25 minutes. Can be served with rice or on breads. Just add the fresh Jalapenos once you cooked or just before serving along with sourcream.
    150 ml Brown sauce, 50 ml Water or beef stock

Notes

Veggie Add-ins: Bell peppers and onions add texture and sweetness—don’t skip them!
Simmer Time: Let the chili simmer on low for at least 30–45 minutes to blend the flavors beautifully.
Make It Ahead: Chili tastes even better the next day as the flavors deepen—perfect for meal prep!
Toppings Galore: Serve with shredded cheese, sour cream, chopped green onions, or even avocado for a delicious twist.
